    For the pancakes:

    • 1 cup gluten-free protein oats
    • ½ cup applesauce
    • 2 large eggs

Flip when they bubble on the surface. Continue cooking on the other side until golden brown. Keep cooking with remaining ghee and batter.

This casserole is just as easy and includes cleaner ingredients for a more nutritious (and we’d argue just as tasty) option.

    • 1 tbs avocado or olive oil
    • 1 ½ lb boneless, skinless chicken breast, cubed
    • ½ yellow onion, diced
    • 2 cloves garlic, minced

    • 1 cup grated cheddar cheese
    • ¼ cup parmesan cheese

    Instructions:

    1. Heat a Dutch oven or large skillet over medium-high heat. Add oil to the pan.
    2. Once hot, add the chicken to the pan and sauté for 8 to 10 minutes or so, until the edges start to brown (it will continue to cook in the pan, so it doesn’t have to be cooked through).
    3. Add the onions and garlic, sauté until lightly browned, about 3 minutes.
    4. Add the broccoli, carrots, chicken broth, rice, and spices to the pan. Stir to combine. Cover and cook for 10 to 15 minutes, stirring occasionally.
    5. Once the rice has cooked, discard the bay leaf. Add the milk, cheddar cheese, and parmesan cheese, and cook one to two minutes more until the cheese is melted and incorporated.
