1. Strawberry Spinach Summer Salad

This delicious strawberry spinach salad is the perfect showstopper to bring to a potluck or dinner party and makes for a healthy lunch or dinner when paired with grilled chicken or salmon. Feel free to sub out the feta for your favorite crumbled cheese or choose your favorite nuts to add a tasty crunch to this beautiful meal.

 

Salad Ingredients:

  • 1 Package Spinach
  • 8 oz Strawberries, halved
  • 1 Large Avocado, sliced
  • ½ Red Onion, thinly sliced
  • ½ Cup Crumbled Feta
  • ⅓ Cup Sliced Almonds
  • ⅓ Cup Pistachios, shelled and chopped

Balsamic Vinaigrette Ingredients:

  • 1 Cup Strawberries
  • 3 Tbsp Balsamic Vinegar
  • ¼ Cup Olive Oil
  • 1 Tbsp Honey (optional)
  • ½ Tsp Dijon Mustard
  • 1 Garlic Clove
  • Salt & Pepper to taste

Instructions:

  1. Add vinaigrette ingredients to the blender, blend at high speed until smooth.
  2. Refrigerate until ready to serve.
  3. Assemble salad, drizzle with dressing to taste.

Ingredients:

  • 2 Cups Green Apples
  • 1 Cup Pineapple Juice + more to desired texture
  • ¾ Cup Broccoli Florets ¾ Cup Kale ¾ Cup Spinach
  • ½ Cup Frozen Mango
  • 1 Kiwi
  • ½ Banana
  • 2 Tsp Ginger Root

Instructions:

  1. Chop fruit and veggies into smaller pieces.
  2. Add all ingredients into the blender, and blend until smooth.
  3. Enjoy!

In the mood for a savory treat? This spinach artichoke dip will be the life of the party, and better yet no one will know it’s the lighter version. When you make this in an instant pot it all comes together in a matter of minutes, for the tastiest dip that is sure to please!

 

Ingredients:

  • 1 (14 oz) Can Artichoke Hearts, drained & coarsely chopped
  • 10 oz Frozen Spinach, thawed & squeezed
  • ¼ Cup Shallots, diced
  • 1 Clove Garlic, minced
  • ¼ Cup Chicken Stock
  • ½ Greek Yogurt
  • ½ Cup Light Mayo
  • ¾ Cup Grated Parmesan
  • 1 ½ Cup Shredded Mozzarella Cheese
  • ¼ tsp Crushed Red Pepper Flakes
  • Salt & Pepper to taste

For serving:

  • Chips or crackers of choice!

Instructions:

  1. Artichoke hearts, spinach, shallots, garlic, yogurt, mayo, salt, pepper, and red pepper flakes in the instant pot. Stir until well combined.
  2. Set to manual and adjust time to 3 minutes. When finished, quick release to vent.
  3. Stir in cheeses until melted, about 2 minutes.
  4. Pour into a serving dish and serve with your chips or crackers of choice.

 

4. Healthy Homemade Feta Quinoa Wrap

This plant-based wrap will please even the pickiest meat-eaters. It’s packed with essential protein, healthy fats, and nutrient-dense carbs for a filling and satisfying meal that’s easy to enjoy on-the-go!

 

Quinoa Salad Ingredients:

  • 1 Cup Quinoa
  • 1 Can Black Beans (drained and rinsed)
  • 1 Cup Spinach, Chopped
  • ½ Cup Green Onions, chopped
  • ½ Cup Cilantro, chopped
  • 1 Cup Cherry Tomatoes, halved
  • ½ Cup Feta Cheese
  • 2 Limes, Juice of 

Wrap Ingredients:

  • Hummus
  • Tortilla Wrap (Whole Grain, Spinach or Sun-Dried Tomato recommended)
  • ¼ Avocado, sliced

Instructions:

  1. Prep quinoa salad by combining all ingredients.
  2. Assemble wrap by spreading hummus on tortilla, adding a generous helping of quinoa salad, and topping with sliced avocado.
  3. Wrap it all up and enjoy!

 

5. Easy One-Bowl Summer Tex Mex Quinoa Salad

This zesty quinoa salad takes advantage of all of the fresh flavors of summer. A blend of quinoa, pinto beans, fresh corn, and cucumbers converge with red onions, herbs, and a zesty red wine vinaigrette for a totally clean and tasty side or snack.

 

Salad Ingredients:

  • 1 Cup Quinoa, cooked according to package
  • 1 Can Pinto Beans (or black beans), drained and rinsed
  • 1 Cup Corn (about 2 corn cobs)
  • ½ English Cucumber, chopped
  • ½ Red Onions, diced Big Handful of Spinach, chopped
  • ½ Cup Cilantro, chopped
  • ½ Cup Green Onions, chopped
  • Sprinkle of Feta Cheese

Zesty Vinaigrette Ingredients:

  • ¼ Cup Red Wine Vinegar
  • ½ Tsp Cumin
  • ¼ Tsp Chili Powder
  • Ground Pepper to taste

Instructions:

  1. Combine salad ingredients and mix well.
  2. Make the vinaigrette by combining red wine vinegar, cumin, chili powder, and ground pepper. Whisk to combine and drizzle dressing over salad.
  3. Toss salad. Serve, or keep in the fridge up to 5 days.
